YUM …COOKIES!
Do you need a good cookie recipe? Try one of Pastry Chef Jill McCord’s go-to recipes. Did you know that she and her students baked hundreds of cookies for “Camp Gingerbread,” a fundraising event for homeless children via the Shared Housing Center?
Gingerbread cookies
Yields: approximately 18 cookies
Ingredients:
1 cup butter, room temperature
1 3/4 cups brown sugar
1 ¼ cups granulated sugar
2 tablespoons molasses
6 eggs
6 cups of flour
2 teaspoons baking soda
1 tablespoon ginger
1 Tablespoon cinnamon
1 Tablespoon Allspice
Procedure:
Cream butter and brown sugar. Add eggs one at a time. Add molasses. Sift dry ingredients, and then add to bowl. Slightly refrigerate dough. Roll and cut out cookies. Bake at 350 degrees for 10-15 minutes. Decorate with royal icing, and add eyes to your gingerbread cookies with an edible marker.
